MUSHROOMS WITH TOMATOES AND PEAS | |
1 med. onion, sliced 1/2 to 1 tsp. turmeric 1/4 tsp. ginger 1 tbsp. vegetable oil 1 (10 oz.) pkg. frozen peas, thawed and drained 8 oz. whole mushrooms 2 tsp. lemon juice 1 1/4 tsp. salt 2 med. tomatoes, cut into wedges Cook and stir onion, turmeric and ginger in oil in large skillet over medium heat until onion in tender. Stir in peas, mushrooms, lemon juice and salt. Cook uncovered, stirring occasionally, until peas are tender, about 8 minutes. Stir in tomatoes; heat just until hot. |
