KEN'S QUICK PUMPKIN MUFFINS 
1 1/4 c. sugar
1 1/2 c. sunflower oil
1 can pumpkin
1 tsp. baking soda
3 tsp. cinnamon
4 eggs
2 c. flour
1 tsp. salt
1 c. chopped pecans
1 tsp. baking powder

Combine all ingredients. Bake at 350 degrees for about 45 minutes. Makes 12 muffins.

Low Cholesterol Option: Use 1/2 cup oil and 1/2 cup applesauce in place of the sunflower oil and substitute egg beaters for the eggs.

ICING FOR KEN'S QUICK PUMPKIN MUFFINS:

1 lb. box powdered sugar
1 stick soft butter
1 (8 oz.) cream cheese
1 tsp. vanilla
1 c. chopped pecans

Combine all ingredients, blending until smooth.
