SUNDAY CHICKEN DINNER 
1 lb. boneless chicken breast
1 tbsp. lime juice
2 c. rice, cooked with pinch of poultry seasoning
1 can mixed vegetables
2 cans cream of chicken soup
1/2 onion, chopped
Ritz cracker crumbs

Cut the chicken in just larger than bite-size pieces. Saute with the onion 5 minutes, add lime juice and simmer 10 minutes or until cooked. Pour in one can of the soup and heat until almost boiling. In 2 quart casserole, put cooked rice in the bottom. Layer mixed vegetable next. Add chicken mixture. Top with second can of soup. Sprinkle Ritz cracker crumbs on top. Bake in microwave for 10-15 minutes or until bubbly.

Since microwave ovens vary in power, you may need to adjust your cooking time.
