CORNMEAL MUFFINS 
1 c. cornmeal
1 c. flour
1/3 c. sugar
4 tsp. baking powder
1 egg
1/4 c. shortening (at room temperature)
1 1/4 c. milk

Mix all ingredients together. Add liquid ingredients. Mix, but DO NOT over mix. Pour into greased and floured muffin pan. Bake at 425 degrees for 20 minutes. Makes 12 muffins.
