CORNMEAL MUFFINS 
1 c. cornmeal
1 c. flour
4 tsp. baking powder
1 tbsp. sugar
1 egg (I used 2 eggs)
1 1/2 c. milk
4 tbsp. melted shortening

Mix first 5 ingredients. Add beaten egg and milk to make stiff batter. Add melted shortening. Bake in muffin pans about 20 minutes at 375 degrees.
