Take one piece of fish 5 ounces or better, place in a washed and clean banana leaf, add one teaspoon of soy sauce, one pat of butter, one wedge of crushed garlic, three or four strips of celery (small). Wrap banana leaf around fish then wrap either foil for the oven or the bar-b-que and plastic wrap if microwave oven is to be used. The taste will be the same whether you use a regular oven, outdoor bar-b-que, microwave oven or steamer. Some people like to add a teaspoon of vinegar or regular fish seasoning. Regardless of personal desire it always comes out good. TERIYAKI FISH: Take one piece of fish 5 ounces or better, and place in a sauce of the following proportions. One part soy sauce, two or three parts water, one part vinegar and one or two parts pineapple juice or mango juice. DO NOT use papaya juice or extract. If juice is not available use one half to one teaspoon of sugar. |
