BLACK BOTTOM CUPCAKES 
1 (8 oz.) pkg. cream cheese
1 unbeaten egg
1/3 c. sugar
1/8 tsp. salt
1 (6 oz.) pkg. semi-sweet chocolate chips
1 1/2 c. flour
1 c. sugar
1/4 c. cocoa
1 tsp. baking soda
1/2 tsp. salt
1 c. water
1 tbsp. vinegar
1 egg
1/3 c. cooking oil
1 tsp. vanilla

Combine first four ingredients in a small mixing bowl. Beat well and stir in chocolate chips. In a large mixing bowl, combine next 5 dry ingredients. Add remaining ingredients and beat well. Fill lined cupcake tins with chocolate mixture. Top with large spoon of cream cheese mixture. Sprinkle with sugar and chopped nuts if desired. Bake 30 to 35 minutes. Makes 18 cupcakes.
