HOT GERMAN POTATO SALAD | |
4 med. potatoes 6 slices bacon 2/3 c. chopped onion 2 tbsp. flour 4 to 6 tsp. sugar 1 1/2 tsp. salt 1/2 tsp. celery salt Dash of pepper 2/3 c. water 6 tbsp. vinegar Boil potatoes in their jackets. Peel and slice thinly. Fry bacon slowly in skillet, drain; crumble. Saute onion in bacon fat until golden brown. Blend in flour and seasonings. Cook over low heat, stirring until smooth and bubbly. Remove from heat. Stir in water and vinegar. Bring to boil, stirring constantly. Boil 1 minute. Stir potatoes and crumbled bits of bacon in carefully. Remove from heat; cover and let stand until ready to serve. Makes 4 servings, I usually double this. |
