ZUCCHINI CASSEROLE 
1 1/2 lbs. zucchini, boiled and mashed
1 clove garlic, crushed
1/2 c. cooked rice
2 beaten eggs
2 c. sharp Cheddar cheese
Salt and pepper to taste

Preheat oven to 350 degrees. Mix all ingredients and pour into deep casserole dish. Cook for 1 hour. Can be put together ahead of time and kept in refrigerator. Increase cooking time accordingly.
