ZUCCHINI CASSEROLE | |
2 lbs. zucchini, sliced and par boiled 1 lb. ground chuck 1 chopped onion 1 c. instant rice 1/2 tsp. garlic salt 1/4 tsp. oregano 2 c. cottage cheese 1 can mushroom soup 1 c. grated sharp Cheddar cheese Brown chuck with onion and add rice, salt, and oregano. Put 1/2 of squash in bottom of shallow 2 quart casserole. Spread with meat and rice. Spread cottage cheese over meat. Put remaining squash over. Pour soup and top with cheese. Bake at 350 degrees for 40 minutes. |
