DELICIOUS CHOCOLATE PUDDING 
2 (1 oz.) sq. unsweetened chocolate
1/2 c. sugar
3 tbsp. cornstarch
1/4 tsp. salt
2 1/4 c. milk
1 tsp. vanilla

Place chocolate in top of a double boiler, bring water to a boil. Reduce heat to low; cook until chocolate melts, stirring occasionally. Set aside.

Combine sugar, cornstarch and salt in a medium saucepan; gradually stir in milk.

Add melted chocolate to milk mixture and cook over medium heat, stirring constantly, until mixture is smooth and thickened. Remove from heat; stir in vanilla.

Spoon chocolate pudding evenly into individual dessert dishes. Cover each dish with plastic wrap, gently pressing plastic wrap directly on pudding. Chill pudding thoroughly before serving. Serves 4.
