SUGARLESS CRAZY CAKE 
1 c. raisins
2 c. water
1 egg, well beaten
1 tsp. vanilla
1 1/2 tsp. artificial sweetener
1 c. rolled oats
1/2 c. chopped nuts (optional)
1/2 c. soft shortening
1 c. flour
1/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon

Combine raisins in water, simmer for 15 minutes. Let stand until cool. Add egg. Mix in vanilla, sweetener, oats and soft shortening. Sift together flour, salt, baking soda and cinnamon. Add dry ingredients to raisin mixture with nuts if used. Mix all together well. Pour into greased eight (8) inch cake pan. Bake 30-35 minutes at 350 degrees.
