MOTHER'S APPLE CAKE 
5 McIntosh apples, peeled and cubed
4 tsp. cinnamon
5 tbsp. sugar
3 c. sifted flour
2 c. sugar
1 c. vegetable oil
4 eggs
1/4 c. orange juice
2 tsp. baking powder
2 1/2 tsp. vanilla
1 tsp. salt
1 c. walnuts, broken

Blend sugar and cinnamon; sprinkle over apples and set aside. Beat first eight ingredients until smooth. Stir in walnuts. Pour 1/2 of batter into 10 inch greased and floured tube pan. Arrange 1/2 of apples over batter. Pour the rest of batter then rest of apple on top. Bake at 350 degrees for 1 1/2 to 1 3/4 hours. Cool in pan.
