PORK CHOPS 
4 lg. shoulder or loin chops
1 tsp. salt
1 tsp. pepper (black or white)
2 med. bell peppers, diced
1 med. onion, sliced
1 c. sliced apples
1 tbsp. brown sugar
1 tbsp. vinegar

Season chops with salt and pepper. Brown lightly in a medium hot skillet. Remove chops from skillet and set aside. Saute pepper, onion, and apple for 5 minutes. Add sugar and vinegar and simmer for an additional 5 minutes. Add chops to mixture. Simmer, covered, slowly for 20-30 minutes or until pork is properly cooked. Serves 4.
