MOCK BAKED POTATOES 
8 to 10 med. Idaho potatoes
1 (8 oz.) pkg. cream cheese
1 carton sour cream
4 tbsp. butter
1/2 c. chopped chives
Salt and pepper to taste
Paprika

Boil potatoes (peeled) until tender. Beat sour cream and cream cheese together, add hot potatoes and beat until smooth. Add butter, chives, and salt and pepper to taste. Pour into a well greased 2 quart casserole, dot with butter, and sprinkle with paprika and a few chives on top. Bake in a preheated 350 degree oven for approximately 30 minutes until hot. This can be prepared ahead of time and put into the oven just before serving.
