DOUBLE BAKED POTATOES 
6 med. Idaho potatoes
3/4 to 1 c. milk
1/3 c. butter
1/2 tsp. salt
1/8 tsp. pepper
1 egg
3 green onions and tops, chopped fine
1 c. grated Parmesan cheese

Grease and bake potatoes for 1 hour at 425 degrees. Cut lengthwise - slice from top of each hot potato. Scoop out potato, leaving shell intact. Mash with electric beater, adding milk, butter, and seasonings. Add egg and whip until fluffy. Fold in onions and 3/4 of cheese. Fill shells and top with remaining cheese. Return to 425 degree oven for about 10 minutes.
