PUMPKIN CREAM CHEESE ROLL 
3 eggs, beaten
1 c. sugar
2/3 c. pumpkin
1/2 tsp. cinnamon
3/4 c. flour
1 tsp. baking soda
1/2 c. chopped pecans

Do not overmix. Butter jelly roll pan, line with wax paper. Butter top of paper. Bake 10 to 15 minutes at 375 degrees. Lay on dish towel covered with powdered sugar peel off paper, roll up in towel, while warm. Cool 30 minutes, unroll onto foil. Spread with filling and roll.

FILLING:

8 oz. cream cheese
2 tbsp. soft butter
1 c. powdered sugar
1 tsp. vanilla
