PUMPKIN CAKE WITH CREAM CHEESE ICING | |
2 c. sugar 4 eggs 1 c. salad oil 2 c. pumpkin 2 c. flour 2 tsp. cinnamon 2 tsp. baking soda 1/2 tsp. salt Combine all ingredients in large bowl. Turn into a large 13 x 9 pan, greased and floured. Bake at 350 degrees for 35 minutes or more (45). ICING: 1 stick butter 1 box confectioners' sugar 8 oz. softened cream cheese 1 tsp. vanilla 1 c. chopped nuts to sprinkle on top Blend all ingredients in mixer and spread on top of cooled cake. Sprinkle nuts on top. Can do ahead and freeze. Serves 8 to 10. |
