CRUSTLESS QUICHE 
1/2 lb. butter
1/2 c. flour
1 c. milk
1 lb. Monterey Jack cheese, cubed
6 eggs
1 (3 oz.) pkg. cream cheese
2 c. cottage cheese
1 tsp. baking powder
1 tsp. salt
1 tsp. sugar

Melt butter in small saucepan. Add flour and cook until smooth. Beat eggs. Add milk, cheese and dry ingredients. Mix with flour mixture and stir until well blended. Pour into a well greased 9 x 12 inch pan. Bake uncovered at 350 degrees for 45 minutes. Serve for lunch or for hors d'oeuvres, cut into small pieces.
