TABOULEE SALAD 
1/4 c. bulgar
1 med. size ripe tomato
1 lg. bunch parsley
Juice of 1 lemon
1/4 c. vegetable oil
1/2 c. green onions, use green part only
Salt and pepper to taste

Make sure ingredients are drained and dried. Soak the bulgar in warm water for 1/2 hour. Chop parsley, onion, and tomato very fine. Squeeze all water from bulgar.

Combine bulgar, lemon juice, oil, salt, pepper, parsley, onion and tomato. Serve scooped on fresh Romaine lettuce leaves or tuck in pockets of pita bread.
