APPLE AND YAM CASSEROLE 
Peel and slice raw sweet potatoes in 1/4-inch slices (about 1 lb.)
1/2 c. honey
1 tbsp. lemon juice
1/2 stick butter, sliced thin
1/4 tsp. nutmeg
3 apples, sliced with peel on but remove center cores
1/4 c. brown sugar
3 tbsp. water

Prepare sweet potatoes and apples; lay slices of each alternately, overlapping slightly in shallow baking dish. Drizzle honey and lemon juice over slices then crumble brown sugar evenly. Slice butter very thin and lay over this, then add the water carefully so as not to wash off sugar.

Cover with tin foil and bake at 350 degrees for about 30 minutes. Remove tin foil and bake an additional 20 minutes until syrup candies and is thick and potatoes are tender. Serve with baked ham or roast pork.
