ITALIAN CHEESECAKE 
3 lb. Ricotta
1 pt. heavy cream
6 eggs, beaten
Grated rind of 1 lemon
3 tbsp. vanilla
1 c. sugar
3/4 c. flour

CRUST:

12 grahams, rolled fine
1/4 c. sugar
1/4 c. melted butter

Mix together ingredients for crust. Line bottom and sides of a 19 inch spring pan.

Combine all ingredients for filling and mix by hand. Pour into graham cracker crust. Bake at 350 degrees for 1 1/2 hours or until knife comes out clean. Serves 12.
