ITALIAN CHEESECAKE 
3 lbs. ricotta
7 eggs
1 c. sugar
1 tsp. vanilla
1 oz. rum

Preheat oven to 350 degrees. Grease a 9" pan and set aside.

Mix ricotta and sugar together. Add one egg at a time to mixture, mixing well after each addition. Add vanilla and rum to mixture. Pour into pan and bake for 1 1/4 hours.
