ZUCCHINI SOUFFLE 
3 c. zucchini, cubed
1 c. Bisquick
1 sm. onion
1/2 c. oil
4 eggs
1/2 c. parmesan cheese
1/2 tsp. parsley
Salt and pepper

Mix ingredients. Pour into greased 9 inch pie plate. Bake at 350 degrees for 30 to 45 minutes.
