CHICKEN ENCHILADAS FOR MICROWAVE 
1 lg. chopped onion
1/2 c. chopped green peppers
2 c. chopped chicken or turkey
2 (10 oz.) mild enchilada sauce
1/2 c. cheese
8 or more corn tortillas

Combine onion and pepper; cover with plastic wrap. Cook on high 3 minutes. Stir in chicken and 1/2 cup of sauce. Cover, cook on high for 2 minutes. Stir in 1/2 of cheese; let stand covered. Arrange tortillas between paper towels; heat 1 minute on high. Roll mix in tortillas. Pour sauce over, cover, and heat 9 to 10 minutes on high. Put on remaining cheese and return to microwave for 3 minutes on high. Let stand 3 minutes. I use more cheese.

Since microwave ovens vary in power, you may need to adjust your cooking time.
