CHICKEN CHEESE ENCHILADAS | |
1 cooked deboned & shredded chicken 3 doz. tortillas 1 lb. Jack cheese 1 lb. Cheddar cheesesm. can sliced olives 2 bunches green onions 16 oz. sour cream 1 sm. can diced chilies (green) 1/2 c. oil Cook and debone chicken and put in bowl. Add 1/2 sour cream, 1/2 pound of Jack and Cheddar; set aside. In separate bowl, mix rest of cheese, sour cream and diced green chilies; set aside. In frying pan; heat oil and lightly fry tortillas. Roll tortillas using mixture with chicken. Place on cookie sheet. Mixture without chicken goes on top. Garnish with olives and green onions. You can freeze and use later or eat now. Place in oven at 425 degrees until all cheese is melted. |
