POTATO PANCAKES 
6 potatoes, peeled
6 tablespoons cream or half and half
2 eggs, beaten
4 tablespoons all purpose flour
pinch of salt
butter, for frying

Grate the peeled potatoes onto clean cheesecloth and squeeze out the excess moisture. Add cream or half and half, beaten eggs, flour and salt. Mix well.

Fry in a hot skillet with melted butter. Sprinkle with sugar before serving (optional).

You can optionally add grated onions (omit sugar).
