CREAMY VANILLA CHEESECAKE 
5 (8 oz.) pkgs. cream cheese
1 1/2 c. sugar
3 eggs
2 1/2 tsp. vanilla
Graham cracker crust

Beat softened cream cheese at high speed of an electric mixer until light and fluffy. Gradually add sugar, beating well. Add one egg at a time beating well after each addition. Stir in vanilla. Pour in graham cracker crust. Bake at 350 degrees for 40 minutes. Turn oven off and partially open oven door. Leave in the oven for 30 minutes. Remove from oven and let cool on wire rack in a draft free place. Cover and chill at least 8 hours. Yields 1 (10") cheesecake.
