LOUISIANA CREOLE ROAST | |
3 lb. roast (well trimmed), 1 thick cut of round steak may be used 2 tbsp. oil 1 tsp. salt 1 tsp. pepper 1 sliced onion 1 1/2 c. chopped celery 2 (16 oz.) cans tomatoes or tomatoes with okra, undrained 6 drops red pepper sauce Brown meat in oil in large heavy pan. Season with salt and pepper, add onions, celery, green pepper and saute' until tender. Add remaining ingredients. Cover and simmer for 2 hours or until tender or bake at 350 degrees for about 2 hours. Thicken sauce with cornstarch for gravy when done. |
