PITTSBURGH POTATOES | |
Salted water 4 c. peeled and cubed potatoes 1 med. onion, chopped 3 pimientos, chopped 2 c. med. white sauce (see any basic cookbook) 1 c. grated mild cheese Bring a large pot of salted water to a boil. Add potatoes and onion. Cook for 5 minutes. Add pimientos and continue cooking for 7 minutes. Drain. Turn mixture into a buttered 2 quart baking dish. Cover with white sauce and cheese. Bake in a 350 degree F. oven 15 to 20 minutes, or until potatoes are tender. |
