SMOKED SAUSAGE SKILLET DINNER 
6 tbsp. butter
3 tbsp. cooking oil
6-8 med. potatoes (peeled optional), sliced 1/4 inch slices, potato chip style
Link smoked sausage, cut into 1/4 to 1/2 inch slices
1 sm. to med. onion, chopped
1 bell pepper, chopped
Salt and pepper, to taste
Other seasonings that can be added: parsley, chives, celery, salt, or seasoning salt

Melt butter in a large skillet. Add oil, potatoes, onion, bell pepper, and seasonings. Mix. Add sausage. Cover and cook medium slow until potatoes are almost done. Remove cover for last few minutes.
