APPLE PIE FILLING 
10 c. nuts
4 1/2 c. sugar
1 c. cornstarch
2 tsp. cinnamon
3 tbsp. lemon juice
1 tsp. nutmeg
1 tsp. salt
3 drops yellow food coloring
5 1/2 lb. apples, peeled, cored, and sliced

In large saucepan blend sugar, cinnamon, cornstarch, nutmeg, and salt. Stir in water, cook, stirring until it comes to a boil and thickens. Add lemon juice and food coloring. Fill hot jars to the neck with sliced apples. Add hot liquid syrup. Seal and process 20 minutes in water bath. Yield 7 quarts.
