CONGO BARS 
2/3 c. butter
2 1/4 c. light brown sugar (1 lb. box)
2 2/3 c. sifted flour
2 1/2 tsp. baking powder
1/2 tsp. salt
3 eggs
1 c. (6 oz.) semi sweet chocolate chips
1 c. chopped nuts

Melt butter or shortening in a saucepan. Stir in brown sugar until well mixed and let cool for 10 minutes. Sift together dry ingredients and set aside.

With a spoon, beat the eggs into the sugar mixture. Add flour mixture a little at a time and stir well. Add nuts and chocolate chips. Pour into a large 10 x 10 inch square pan (or one comparable) which has been greased and floured. Bake at 350 degrees for 45 to 50 minutes, but be careful not to let them get too dark on top.

A real MAN's cookie. It takes a man to stir the batter, but it's WELL WORTH THE EFFORT!!
