ZUCCHINI & TOMATO AU GRATIN 
2 med. zucchini
1/2 onion, chopped or sliced
3 tbsp. butter/shortening
4 med. tomatoes, wedged
1/2 tsp. salt
3/4 c. grated cheese

Wash zucchini and cut into 1/4" slices. Cook onion in butter or shortening, add zucchini and cook slowly for 5 minutes, stirring frequently. Add tomatoes and salt. Cover and cook 5 minutes longer. Turn into greased baking dish, sprinkle with cheese and bake at 375 degrees for 20 minutes.
