ZUCCHINI AU GRATIN 
2 tbsp. oil
4 med. zucchini, peeled and cut into thin rounds
1/2 lb. Mozzarella cheese, grated
1/4 c. grated Parmesan cheese
Salt
1 sprig parsley, chopped (or substitute dried parsley)
1/2 c. bread crumbs
2 tbsp. butter

Pour oil into 8 inch baking dish; add 1/3 each of zucchini, Mozzarella cheese, Parmesan cheese, salt and parsley. Repeat, making 3 layers. Cover with crumbs and dot with butter. Bake at 350 degrees uncovered until golden brown, about 45 minutes. Serves 6-8.
