CALIFORNIA MIX CHILI (CROCK-POT) 
Excellent way to enjoy chili if a family member does not like beans. Also great GAS free chili recipe!

1 1/2 lb. ground beef
2 cloves garlic, crushed and cut fine
1 green pepper, diced
1 large onion, diced
1 packet chili seasoning (or your favorite chili seasoning)
1 (4 oz.) can mushrooms, drained
2 stalks celery, diced
3 or 4 cups fresh diced tomatoes (or 28 oz. can)
1 bag California mix vegetables (frozen)
8 oz. cheddar cheese, cubed

Partially thaw California mix veggies, and cut into 1/2-inch cubes.

Brown ground beef, garlic, peppers, and onions in large skillet (about 15 minutes). Add seasoning mix. Transfer to Crock-Pot. Add mushrooms, celery, tomatoes, and California mix. Simmer on low for 8 hours. Add cheddar cubes before serving.
