GRANDMA'S SPANISH RICE | |
1 c. rice 2 pats butter 1 sm. onion, chopped 2 tsp. salt 1 clove garlic, minced 1 fresh tomato, chopped 1/2 c. peas 1/4 c. pine nuts 2 c. chicken broth 1 tbsp. parsley 1 tbsp. cilantro Brown the rice in butter. Add remaining ingredients; cover and simmer 25 minutes or until done (moisture is gone). Makes 6-8 servings. |
