GOLDEN PEPPER GAZPACHO 
GARNISH:

1 sm. onion, finely chopped
2 golden bell peppers, finely diced
2 cloves garlic, coarsely chopped
3 tbsp. olive oil
3 tbsp. butter
4 slices French bread, cut into cubes

Heat the butter and olive oil and add the bread and garlic. Cook until golden brown. Set aside.

SOUP:

10 ripe tomatoes, peeled and seeded
1 onion, coarsely chopped
3 cloves garlic
2 cucumbers, peeled, seeded and chopped
8 tbsp. red wine vinegar
1 c. V8 juice
1/2 c. olive oil
1 tbsp. Tabasco
Salt and pepper to taste

Puree everything in a blender and transfer to a bowl and adjust seasoning. Serves 8.
