CORN FRITTERS | |
1 (1 lb.) can whole kernel corn, drained 1 egg 1/2 tsp. salt 1/4 c. milk 1 c. flour 2 tsp. baking powder 2 tsp. melted butter 1/2 tsp. sugar Fat for deep frying While corn is draining, mix egg, salt, milk, flour, baking powder, butter and sugar. Stir with long handled wooden spoon. Add corn; let sit 5 minutes. Drop by teaspoonfuls into hot fat; cook until puffy and golden brown. Drain on paper towels. Yield: 4-6 servings. |
