EASY APPLE CAKE 
2 c. diced apples
1 c. sugar
1/3 c. oil
1/2 tsp. vanilla extract
1 egg, beaten (or 2 egg whites or egg substitute equivalent to 1 egg)
1 1/2 c. unsifted flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 c. raisins

Combine apples and sugar in a mixing bowl and let stand 10 minutes. Blend oil, vanilla and egg with the apples. Then combine the dry ingredients and mix in well. Stir in the raisins. Pour into greased 8-inch square cake pan. Bake at 350 degrees for 35 to 40 minutes. (Yield: 9 servings, 290 calories per serving.)
