GARLIC PARMESAN MEATBALLS | |
1 lb. ground beef 1/3 c. grated Romano or Parmesan cheese 2 eggs 1 med. onion, finely chopped 2 tsp. salt (optional) 1/2 tsp. black pepper 1/2 lb. lean ground pork sausage 4 slices bread, soaked in water and squeezed tightly 5 cloves fresh garlic, minced 1 tbsp. chopped parsley 1 tsp. oregano Combine all ingredients and mix well. Shape into balls. These can be fried, cooked in the oven or dropped into hot spaghetti sauce. They also freeze well. Makes about 3 dozen. |
