SAUSAGE 
1 lb. very lean ground beef or turkey
1/2 tsp. ground sage
1/4 tsp. thyme
1 tsp. salt or salt substitute
1 tsp. pepper
1 tsp. liquid smoke

Mix thoroughly; shape into patties. Broil or pan fry. If frying, pour off fat as it accumulates. Drain on a paper towel. For hot sausage, add 1/2 tsp. crushed red pepper.
