HEALTH BREAD | |
7 c. unbleached flour 4 c. rye flour 4 c. whole wheat flour 1 3/4 c. dry milk 1/2 c. wheat germ 2 1/2 tbsp. salt 1 c. raisins or prunes, cut up 1 pkg. dry yeast dissolved in 1/4 c. lukewarm water 1/4 c. honey 1/4 c. dark molasses 6 c. lukewarm water Mix all the dry ingredients well in a large bowl, plus the raisins or prunes. Combine honey and molasses and stir into the lukewarm water and add the dissolved yeast. Mix the liquids into the dry ingredients and stir until all is mixed well. Cover the bowl with a towel and set the dough in a warm place to rise until double in bulk. Turn the risen dough out on a floured board and divide it into 4 parts. Then shape into 4 loaves and place each in a well greased 5x9x3 inch bread pan. Cover the loaves while they rise. Bake in moderate oven for 45 minutes. When baked take out of oven and place on a wire rack to cool. Butter the tops before taking the bread out of the pans. When cool, bag the loaves and put in refrigerator or freezer. Makes 4 loaves. |
