IRISH RAISIN CARAWAY BREAD | |
5 c. flour 2 tsp. salt 4 tsp. baking powder 1 tsp. baking soda 1/2 c. shortening 1 c. sugar 2 eggs 3 c. buttermilk 2 c. raisins 4 tsp. caraway seeds Optional ingredients: any dried fruit pieces you like (ex. dried apricots, prunes, dates, etc.) Mix ingredients in large bowl in given order until batter is smooth. Place in loaf pans which have been greased and floured. Makes 2 loaves. Bake at 350 degrees for 30 minutes, turn oven down to 325 degrees, and bake for approximately 30 minutes longer. Test with toothpick to see if done. You may substitute buttermilk with 3 cups milk plus 3 tablespoons vinegar. |
