MARY BETH'S IRISH SODA BREAD | |
4 c. flour 3 tbsp. sugar 1 tbsp. baking powder 2 tsp. caraway seeds 1 tsp. salt 1 tsp. baking soda 1/4 c. shortening or butter 1 1/2 c. golden raisins 2 egg whites 1 whole egg 1 1/2 c. buttermilk Preheat oven to 350 degrees. Grease and flour 9 x 2 inch round cake pan. In large bowl, combine first 6 ingredients. With pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in raisins. In small bowl, beat egg whites slightly - remove 1 tablespoon and reserve. Add whole egg to egg white mix and beat with wire whisk. Stir in buttermilk and beaten eggs into flour mixture until flour is moistened. On well floured surface knead dough 8 to 10 strokes. Shape dough into ball. Place into cake pan - cut 4 inch cross across top - brush dough with reserved egg white. Bake bread 1 hour. |
