SPICY CHICKEN CAESAR SALAD 
1 large head romaine lettuce, washed, drained and torn
2 medium tomatoes, diced
1/2 large cucumber, sliced and halved
4 garlic cloves, minced
3 (5 oz. ea.) boneless, skinless chicken breasts, cut into strips, an 1/8-inch thick
1/4 cup lemon juice
1-2 tbsp. chili powder
1 pkg. garlic and butter flavoured or Caesar croutons
1 cup Caesar dressing (any kind)
2 tbsp. vegetable oil
1 tsp. salt
pepper, to taste

Put first three ingredients in a large bowl and toss.

Heat oil in a large iron skillet or wok over medium heat. Add garlic and sauté until lightly browned. Add chicken, lemon juice, chili powder, salt and pepper and cook, stirring occasionally until chicken is thoroughly cooked and browned evenly. Remove from heat.

Divide salad over four large dinner plates, spoon chicken over top, top with croutons and drizzle with dressing.

Serves 4.
