SQUASH CASSEROLE 
2-2 1/2 lb. yellow squash
1/2 c. butter
3/4 c. chopped onion
15 Ritz crackers
2 eggs, beaten
Salt & pepper to taste
1/2 tsp. Tabasco
1 c. grated sharp Cheddar cheese
1 1/2 c. Ritz cracker crumbs
1/4 c. melted butter

Slice and cook squash until tender. Drain. Saute onion in butter. Mix with squash. Add 15 crackers, eggs, salt, pepper and cheese. Pour into 2 quart casserole. Cover with buttered crumbs. Bake at 350 degrees for 35 minutes.
