FRESH APPLE CAKE 
3 c. fresh apples, diced
2 c. sugar
3 c. flour
1 1/3 c. Wesson oil
1 c. chopped nuts
2 eggs
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. salt

Cream together sugar, Wesson oil and eggs. Sift together all dry ingredients. Add diced apples. Mix into creamed mixture; add vanilla and nuts. Pour into greased oblong pan. Bake 45 minutes at 350 degrees. Freezes well for future use.
