LEMON COOKIES 
1 pkgs. lemon cake mix (Duncan Hines)
1 egg
1 (4 oz.) carton rich topping (found in frozen foods section at grocery store, defrost before using)
1 tsp. lemon extract
Powdered sugar

Mix cake mix with egg, topping and extract. Chill batter for 1 hour. Fill pie plate with powdered sugar. Drop batter, in balls, into powdered sugar. Grease a cookie sheet, and place cookies on sheet; press each gently with a fork. Bake at 350 degrees for 10 to 12 minutes.
