MEXICAN MACARONI AND CHEESE 
8 oz. pkg. macaroni
4 tbsp. butter
1/4 onion, chopped
1 clove garlic, minced
2 1/2 c. grated cheddar and jack cheese, combined
1 c. milk
1 sm. can chopped Ortega chilies
Salt and pepper to taste
1 c. Tortilla chips, crushed

Preheat oven to 325 degrees. Cook macaroni according to directions, until al dente. Drain. Meanwhile melt 1 tablespoon butter in sauce pan. Saute onion, bell pepper and garlic until wilted. Add remaining butter and noodles; toss to combine. Add 2 cups cheese, milk and chili peppers, salt and pepper. Pour into 1 1/2 quart oiled casserole. Bake for 30 minutes or until set. Sprinkle with crushed tortilla chips and remaining cheese. Bake 10 minutes more.

Very good!, Family loves it. Bell pepper is not in ingredient list, so I improvised with more onion and some bottled Pico de Gallo. Still good...
