MEXICAN MACARONI AND CHEESE | |
8 oz. pkg. macaroni 4 tbsp. butter 1/4 onion, chopped 1 clove garlic, minced 2 1/2 c. grated cheddar and jack cheese, combined 1 c. milk 1 sm. can chopped Ortega chilies Salt and pepper to taste 1 c. Tortilla chips, crushed Preheat oven to 325 degrees. Cook macaroni according to directions, until al dente. Drain. Meanwhile melt 1 tablespoon butter in sauce pan. Saute onion, bell pepper and garlic until wilted. Add remaining butter and noodles; toss to combine. Add 2 cups cheese, milk and chili peppers, salt and pepper. Pour into 1 1/2 quart oiled casserole. Bake for 30 minutes or until set. Sprinkle with crushed tortilla chips and remaining cheese. Bake 10 minutes more. |
